Frozen Peach Yogurt

To make this refreshing dessert you'll need the following ingredients: 3 cups of peaches, peeled, stoned and sliced ¾ cup of sugar 1 tablespoon lemon juice 1 tablespoon corn starch 1 cup plain Greek Yogurt
Ingredients
  • 3 cups of peaches, peeled, stoned and sliced
  • ¾ cup of sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon corn starch
  • 1 cup plain Greek Yogurt
Instructions
  1. In a large bowl, mix the peaches with a ½ cup of sugar and lemon juice until sugar dissolved. Spread the mixture over a shallow dish and put into freezer until solid.
  2. Then, combine the remaining ¼ cup of sugar, corn starch and Greek yogurt in a small saucepan over medium-high heat.
  3. Stirring constantly, allow mixture to come to a boil.
  4. Reduce heat to medium and continue to cook, while stirring, for another couple of minutes until mixture is thick and smooth.
  5. Reduce heat further to low and allow to cook another 2 minutes.
  6. Remove from heat, transfer to bowl and refrigerate until completely chilled.
  7. Once peaches frozen and yogurt mixture chilled, place both in a food processor and process until smooth.
