Bajan Hot Sauce

Ingredients
  • 1½ cups yellow onion, chopped
  • ½ cup carrot, chopped
  • 6-8 scotch bonnet peppers (or habanero)
  • 2 cloves of garlic, minced
  • 2 tablespoons yellow mustard
  • ⅓ cup white vinegar
  • 1 tablespoon lemon juice
  • ½ tablespoon brown sugar
  • 1 teaspoon tumeric
  • 1 teaspoon salt
  • dash of black pepper
  • 1 cup of water
Instructions
  1. After chopping the vegetables, place all of the ingredients into a saucepan and bring to a boil on high heat.
  2. Once boiling, reduce heat and allow to simmer for about 20 minutes until carrots and onions are tender and all of the flavors have melded together nicely.
  3. Then, turn off the heat and allow to cool off a little.
  4. Once the mixture has cooled a little, transfer to a food processor or high powered blender and pulse until desired consistency.
  5. Once you've achieved your desired consistency, pour into jar, keep refrigerated and enjoy!
Notes
Makes one jar of hot sauce which will keep in the refrigerator, in an air-tight container for a month or more.
