Glazed Orange Doughnuts

- 3½ cups of all-purpose flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- 1 cup sugar
- 2 tablespoons shortening, melted
- ¾ cup of milk
- 4-5 tablespoons of orange zest
- 1 egg
- Packet of rapid rise instant yeast
- 1 teaspoon sugar
- ¼ cup warm water (about 105°F)
- Oil for frying
- 1 cup powdered sugar
- 2-3 tablespoons milk
- In small bowl combine warm water, yeast and 1 tsp sugar to proof.
- Set aside for 5 minutes until foamy.
- In large bowl, add flour, salt, sugar and baking powder and whisk together to evenly combine.
- Add melted shortening, milk, egg and proofed yeast mixture and stir.
- Fold in the orange zest.
- On floured surface, roll out a portion of the dough to punch out forms.
- Set aside formed doughnuts floured plate.
- In a small pan, heat oil to 300 - 325°F.
- Once heated, place doughnut ring into the oil.
- Allow to cook 1-2 minutes per side until dark golden.
- Set cooked doughnuts on paper towel lined plate or rack to drain excess oil.
- Adjust heat as necessary as you proceed.
- Mix together powdered sugar with milk to make glaze.
- Add ½ teaspoon of vanilla extract or a little cocoa powder to flavor the glaze if desired.
- Dip doughnuts into glaze to cover both sides.
- Allow excess to drip off, then put on rack or plate to set.
