Banana Chia Muffins

Ingredients
  • ⅓ cup unsweetened applesauce
  • ¼ cup of honey
  • ½ cup of brown sugar
  • 1 egg
  • 3 very ripe bananas
  • ½ cup all purpose flour
  • 1 cup whole wheat flour
  • ½ cup chia seeds
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
Instructions
  1. Mix the applesauce, honey, brown sugar, chia seeds and egg in a large bowl.
  2. Mash the bananas and add them to the mixture.
  3. Stir in the all purpose and whole wheat flours, baking powder and salt until well incorporated.
  4. Preheat the oven to 350°F.
  5. Turn the batter into greased muffin tins.
  6. Top each muffin with a slice of banana (optional).
  7. Bake for 20-25 minutes.
