Zucchini Apple Muffins

- Muffins:
- 1 cup white sugar
- ¼ cup butter
- 1 large egg
- 1½ cups flour
- ¼ teaspoon salt
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ⅛ teaspoon ground ginger
- ⅛ teaspoon ground nutmeg
- ¼ cup vegetable oil
- 1 cup grated apple
- 1 cup grated zucchini
- Topping:
- 2 tablespoons butter, melted
- ½ teaspoon cinnamon
- 2 tablespoons brown sugar
- 2 tablespoons flour
- In a large mixing bowl, cream together the softened butter, sugar and egg.
- Add the flour, baking soda, salt, cinnamon, nutmeg and ginger and stir until well incorporated.
- Grate a large apple until you have about 1 cup of grated apple.
- Grate a small to medium sized zucchini until you have about 1 cup of grated zucchini.
- Fold the grated apple and zucchini into the batter.
- Add the vegetable oil and stir until well combined.
- Transfer batter to greased muffin tins.
- In a small bowl, combine the cinnamon, brown sugar, butter and flour for the topping.
- Stir topping ingredients until well combined.
- Spoon topping mixture over muffin batter for each of the 12 muffins.
- Bake in 350° F oven for 22-26 minutes until a toothpick comes out cleanly.
