Caramelized Onion Quesadilla

Serves: 4 servings
- 2 10-inch tortillas
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 cups onion, sliced
- 1 teaspoon granulated sugar
- ¼ teaspoon dried rosemary
- ⅛ teaspoon ground nutmeg
- Dash of salt and pepper
- Brie cheese, softened, 2 ounces
- Cream cheese, softened, 2 ounces
- Cotija, grated, 2 ounces
- Heat the butter and oil over high heat in a large skillet.
- Once butter melted and hot, but not burnt, add onions, sugar and rosemary.
- Stir occasionally until onions translucent and tender.
- Reduce heat to medium-high and continue to cook onions, scraping pan frequently, for 10-15 minutes until onions are golden brown and soft.
- Let onions cool to room temperature.
- In a small bowl, stir together softened brie and cream cheese with nutmeg, salt and pepper until well combined.
- Take half the cheese mixture and spread it evenly over one of the tortillas, then repeat with the other half of the cheese over the second tortilla.
- Spread the onion mixture over one of the tortillas.
- Sprinkle the grated cotija over the onion mixture.
- Top with the second cheese-spread tortilla.
- Bake in 425°F oven for 5 minutes, then turn over and cook for another 5 minutes until slightly browned.
