Pumpkin Muffins

  • ¼ cup butter
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 15 oz. can of pumpkin
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ⅛ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1½ cups all-purpose flour
  • ⅛ cup pumpkin seeds (optional)
  1. Preheat oven to 350°F.
  2. Lightly grease large muffin pan with cooking spray.
  3. In a large mixing bowl cream together softened butter, sugar, brown sugar, egg and pumpkin until smooth.
  4. In a separate large mixing bowl combine flour, salt, cinnamon, ginger, nutmeg and baking soda and whisk together until thoroughly mixed.
  5. Add the dry ingredients to the wet ingredients and stir until combined.
  6. Spoon equal amounts of the batter into each section of the muffin pan until about ⅔ to ¾ filled.
  7. Top each section of muffin batter with 5-10 pumpkin seeds (if desired).
  8. Bake in the oven for 20-25 minutes until toothpick comes out cleanly.
