Raspberry Dream Squares

Ingredients
Crust
  • 1¼ cups flour
  • ½ tsp salt
  • 2 tbsp sugar
  • ½ cup cold butter
  • ⅓ cup ice water
Cake
  • ¼ cup seedless raspberry jam
  • ½ cup butter, softened
  • ⅔ cup sugar
  • 2 large eggs
  • ⅔ cup rice flour
  • ¼ tsp salt
  • 1 tsp lemon juice
  • ½ tsp raspberry extract
Frosting
  • 1½ cups icing sugar
  • 3 tbsp butter, softened
  • 1 tsp raspberry extract
  • 5 tsp milk
  • Pink food coloring, optional
Instructions
  1. Preheat oven to 375° F.
Crust
  1. Mix flour, sugar salt and cold butter (cut into small pats) until crumbly by pulsing in a food processor.
  2. Add the ice water and continue to pulse until mixture forms a ball of dough.
  3. Remove pie crust to a 9" x 9" baking dish and press evenly into bottom.
  4. Cover pie dough with raspberry jam until well coated.
Cake Batter
  1. Cream butter and sugar in a large bowl.
  2. Add eggs and stir.
  3. Mix in the rice flour, salt, lemon juice and raspberry extract until fully incorporated.
  4. Spoon batter evenly over raspberry jam covered pie crust.
  5. Bake 30 minutes then allow to cool completely.
Icing
  1. In a medium mixing bowl combine icing sugar, butter, raspberry extract and milk and mix until smooth.
  2. Mix in food coloring if adding.
  3. Ice fully-cooled cake and cut into squares.
