Vegan Orange Pound Cake

Ingredients
  • 1½ cups self-rising flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup extra virgin olive oil
  • 1 cup pure organic cane sugar
  • 4 tablespoons ground flax seed
  • ¾ cup water
  • 1 teaspoon vanilla extract
  • ¼ cup orange juice
  • 2 teaspoons finely grated orange zest
  • Olive oil cooking spray
Instructions
  1. In a small bowl, stir together ground flax seed and water and set aside for about 5 minutes.
  2. Preheat oven to 350° F.
  3. In a large bowl, add flour, baking powder and salt and whisk to combine well.
  4. In a separate large bowl, cream together olive oil and sugar.
  5. Add flax mixture to the wet ingredients and mix with mixer on low until well combined. Mixture will be slightly gummy.
  6. To the wet mixture add vanilla and ¼ cup of orange juice and continue mixing until incorporated.
  7. Add dry mixture to wet and stir gently until well combined.
  8. Add orange zest and stir until fully distributed.
  9. Grease a 9x5 inch loaf pan with olive oil cooking spray.
  10. Pour mixture into loaf pan and bake for 65-70 minutes.
Notes
Tip: If you buy whole flax seeds you can grind them up in a coffee grinder.
