Blueberry Banana Muffins

Ingredients
  • 1½ cups of all-purpose flour
  • ⅔ cup of white granulated sugar
  • 2 teaspoons of baking powder
  • ½ teaspoon of salt
  • ¾ cup of quick-cooking rolled oats
  • ½ cup of vegetable oil
  • 2 eggs
  • 1½ cups of mashed ripe bananas
  • ¾ cup fresh or frozen blueberries
Instructions
  1. Start by mixing the first four ingredients together until well combined.
  2. Then, add the oats, oil, eggs and bananas and mix well.
  3. Evenly fold the blueberries into the mixture.
  4. Turn batter into lightly greased large muffin pan (makes about 12 large muffins).
  5. Bake for 30-35 minutes at 350° F.
Notes
These muffins also freeze well!
