Easy and Delicious Banana Bread

There was an unspoken rule in our family to let the last three bananas go untouched until they were heavily spotted or even black, because that meant a batch of banana bread would be made. This simple banana bread is moist, sweet and delicious. Perfect as a breakfast treat, or afternoon snack with a tea or coffee. The recipe takes less than an hour from start to finish.

One thing I love about this recipe is that it’s super easy to mix by hands so you don’t have to go through the trouble of dirtying a mixer.  The less dishes I have to clean the better in my books!  I have to say it’s also virtually fool-proof.  I’ve made hundreds of them and they always turn out perfectly and get compliments from friends and family.

Serves: 1 loaf
Ingredients
  • ¼ cup unsalted butter
  • 1 cup white granulated sugar
  • 1 large egg
  • ¼ teaspoon salt
  • 3 very ripe bananas
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
Instructions
  1. Preheat oven to 350° F.
  2. In a large bowl combine softened butter, sugar and egg and stir until creamy.
  3. Add the bananas and mash until batter is a thick consistency but banana is well combined.
  4. Gradually stir in the remaining dry ingredients.
  5. Bake in a 9x5" lightly greased loaf pan for 40-50 minutes.
Notes
Use very ripe heavily spotted or black bananas for the best results!
