For those that have a life-threatening allergy to eggs, finding delicious cakes to eat that won’t threaten your health can be a real challenge. This is a family recipe that was developed for my brother, who is unfortunate enough to have an egg allergy.
This Eggless Applesauce Cake is easy to make and delicious – the scent from the oven will beat any air freshener on the market!
Eggless Applesauce Cake
- 1 cup of unsweetened applesauce
- ¾ cup packed brown sugar
- ½ cup vegetable olive oil
- 1¾ cups all-purpose flour
- 1 teaspoon cinnamon
- ⅛ teaspoon ground cloves
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup raisins
- In a small bowl, stir together the applesauce, sugar and oil and set aside.
- In a large bowl, combine flour, baking soda, cinnamon, salt and cloves until well mixed.
- Add raisins and stir until evenly distributed - try to break up any clumps the raisins may form.
- Pour the wet apple mixture in with the dry ingredients and combine until moistened.
- Pour into lightly greased 8 x 8 inch square pan.
- Bake at 350° F for 30-40 minutes.
- Once out of the oven and still warm, dust with a teaspoon of icing sugar, if desired.
