There’s nothing better than a frozen treat on a hot summer day. And, since it’s also the peak of peach season here in the Texas Hill Country, I thought Peach Frozen Yogurt would hit the spot nicely. This time of year you can find roadside vendors selling tree-ripened peaches or go to the orchard for some pick-your-own action. Smelling a peach that’s been picked at it’s perfection is such a stark contrast from a peach that was picked early and shipped to your local grocery store.
Frozen Peach Yogurt
- 3 cups of peaches, peeled, stoned and sliced
- ¾ cup of sugar
- 1 tablespoon lemon juice
- 1 tablespoon corn starch
- 1 cup plain Greek Yogurt
- In a large bowl, mix the peaches with a ½ cup of sugar and lemon juice until sugar dissolved. Spread the mixture over a shallow dish and put into freezer until solid.
- Then, combine the remaining ¼ cup of sugar, corn starch and Greek yogurt in a small saucepan over medium-high heat.
- Stirring constantly, allow mixture to come to a boil.
- Reduce heat to medium and continue to cook, while stirring, for another couple of minutes until mixture is thick and smooth.
- Reduce heat further to low and allow to cook another 2 minutes.
- Remove from heat, transfer to bowl and refrigerate until completely chilled.
- Once peaches frozen and yogurt mixture chilled, place both in a food processor and process until smooth.
Preparation
In a large bowl, mix the peaches with a 1/2 cup of sugar and lemon juice until sugar dissolved. Spread the mixture over a shallow dish and put into freezer until solid.
Then, combine the remaining 1/4 cup of sugar, corn starch and Greek yogurt in a small saucepan over medium-high heat. Stirring constantly, allow mixture to come to a boil. Reduce heat to medium and continue to cook, while stirring, for another couple of minutes until mixture is thick and smooth. Reduce heat further to low and allow to cook another 2 minutes. Remove from heat, transfer to bowl and refrigerate until completely chilled.
Once peaches frozen and yogurt mixture chilled, place both in a food processor and process until smooth. Serve immediately. Leftovers can be stored in an air-tight container for up to a month.
This recipe is versatile! If you prefer, substitute peaches with equal amounts of your favorite fruit. You can’t go wrong with raspberry or strawberry! Enjoy!
