The beauty of these Mini Crumble Apple Tartlets is that you can have one and not feel guilty for the indulgence.  Or you can have as many as you like – I won’t tell.  It will be hard to resist these mini tartlets filled with sweet, cinnamon-kissed apples.

The Tartlets

To prepare, start with some pie crust. You can buy a ready-made crust from the store. There is also a Simple Pie Crust recipe you can use if you’d like to make one from scratch. Break the crust into sections then press into a greased mini muffin tin. You don’t have to be very fussy about it – just try to make them roughly the same thickness so they cook evenly.

The Filling

Next, chop a large apple (I like to use Honeycrisp or Fuji) into small cubes. Combine in a large bowl with 1 tablespoon of butter, 1 1/2 tablespoons of flour, 2 tablespoons brown sugar, a splash of lemon juice and a pinch of salt.

Once the mixture is combined, spoon a small amount into each crust form.

The Topping

In a small bowl, mix together a 1/2 cup of all-purpose flour, 1/2 cup of brown sugar, 1 teaspoon cinnamon, and 2 tablespoons of butter. This forms the crumble topping. Spoon some crumble topping onto the apple tartlets. There’s going to be spill over and that’s okay.

Lastly, bake in a 350° F oven for 20-30 minutes until the crust is golden.  Served warm, the apple tartlets go nicely with some vanilla icecream.  Or if you prefer, allow to cool to room temperature and serve with a dollop of whipped cream on top!
