Having a go-to simple pie crust recipe is a must.  This one is just as tasty for a pot pie or an apple pie. The key is to use very cold butter and ice water – and to work quickly.  You’ll also need a food processor so pull out the ole’ KitchenAid.

Now I mentioned above that cold water and butter is key.  In addition, you might want to consider chilling the knife you use to cut the butter into pats and rinsing your hands with cold water before handling the dough.  It might not seem like much, but again cold is your friend.

Ingredients
  • 2½ cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons sugar (or 4 tablespoons if you want a sweet crust)
  • 1 cup cold butter
  • ⅓ cup ice water
Instructions
  1. Place flour, salt and sugar in to the food processor.
  2. Cut the butter (2 sticks) into pats about a tablespoon per pat into the mixture with a chilled knife.
  3. Pulse the food processor until the butter and dry mix is crumbly.
  4. Add the ice water and continue to pulse until the dough starts to form together.

If storing for future use – remove the dough to a lightly floured surface and form into a ball. Then, wrap in plastic wrap and refrigerate (up to a week) or freeze (up to a month).  Otherwise, use as directed in your favorite recipe.

Makes enough for two 9-inch crusts.
