It’s still way too hot down here in Texas to feel like Autumn. And, to be honest, it never will. There won’t really be any Fall colors or those temperature fluctuations synonymous with Autumn. I know it’s Fall because of the availability of pumpkin spice flavored beverages at Starbucks and the fact that there are Halloween decorations at all of the stores. But, since I don’t want to rely on the retail establishments of the world for that Autumn feel, I can achieve it through baking! A perfect recipe for this time of year are these Zucchini Apple Muffins. Flavored with cinnamon, ginger and nutmeg spices that really go well with the apples and zucchini. They are super moist and make an amazing breakfast treat or anytime snack!

Ingredients
  • Muffins:
  • 1 cup white sugar
  • ¼ cup butter
  • 1 large egg
  • 1½ cups flour
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • ¼ cup vegetable oil
  • 1 cup grated apple
  • 1 cup grated zucchini
  • Topping:
  • 2 tablespoons butter, melted
  • ½ teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 2 tablespoons flour
Instructions
  1. In a large mixing bowl, cream together the softened butter, sugar and egg.
  2. Add the flour, baking soda, salt, cinnamon, nutmeg and ginger and stir until well incorporated.
  3. Grate a large apple until you have about 1 cup of grated apple.
  4. Grate a small to medium sized zucchini until you have about 1 cup of grated zucchini.
  5. Fold the grated apple and zucchini into the batter.
  6. Add the vegetable oil and stir until well combined.
  7. Transfer batter to greased muffin tins.
  8. In a small bowl, combine the cinnamon, brown sugar, butter and flour for the topping.
  9. Stir topping ingredients until well combined.
  10. Spoon topping mixture over muffin batter for each of the 12 muffins.
  11. Bake in 350° F oven for 22-26 minutes until a toothpick comes out cleanly.
